Mascarpone frosting makes the whole cupcake. The actual cupcake was a bitgummig in texture and it is for cupcake does not contain butter, oil or milk, but after that you had on the 2 teaspoons of coffee, I felt like a completely differentcupcake

Ingredients
Cupcake:
6 eggs, separated
3/4 vinegar (I used white wine vinegar)
2 cups sugar (divided into two)
1 teaspoon vanilla
1 pinch of salt
2 cups flour

Frosting:
2 packages mascarpone 250 g pc
2 cups powdered sugar
2.5 ml cream
1.5 cups of coffee

Cocoa, for sprinkling

Cupcake:
Preheat the oven to 175 degrees.
Whisk egg whites and vinegar until skumm formed on the sides, then add 1 ml sugar little by little. Beat until it forms peaks when you lift the whisk (you can turnupside down on the dish without the egg whites are on the move).
Whisk egg yolks in about 4 minutes in another bowl. Add the restrerande sugar(1 cup), vanilla and salt until everything is well mixed.

Sift the flour into the beaten egg white bowl, then add egg yolk mixture andgently mix it all together (gently to the air would not go out of egg whites). Fillmolds 2/3 full and bake for 10-15 minutes. Allow to cool. (they will fall sick a bit but it’s okay).
Wear 2-3 teaspoons of coffee in each cupcake, let them soak up the liquid.

Frosting:
Whisk together the mascarpone and icing sugar until smooth. Add the cream andvipspa fluffy for about 1 minute. Spread or pipe onto the cool cupcake. Sift thecocoa mass.

Buttermilk-Blueberry Breakfast Cake

Need to raise enjoyment factor on my breakfast a bit so I decided to bake tonight. Found this recipe a while ago. Buttermilk breakfast cakes I have eaten before and think it’s super good. You think because a lot of this. I have cut down on the amount of sugar in my interpretation of the recipe.

Ingredients:
115 g butter, room temperature
2 teaspoons lemon peel – peel of 1 Ciron (to taste)
2 cup sugar
1 egg
1 teaspoon vanilla
4.75 dl flour
2 teaspoons baking powder
1 teaspoon salt
4.5 cups blueberries (fresh or frozen)
1.2 dl curdled

The first Preheat the oven to 175 degrees.
The second Mix butter, sugar and lemon peel.
The third Add eggs and vanilla and whisk it all together into a batter.
The fourth Mix flour, salt and baking powder.
The fifth Add flour mixture to batter a little at a time, alternating with buttermilk.
The sixth Stir in blueberries.
The seventh Pour batter into a greased ungsform and bake for about 35 minutes.Bake longer if required.
